Before you start

Zest the oranges before cutting them and avoid the bitter white pith. Give the possets the full chill time so they set properly; edible flowers or a little lavender make a lovely topping.

About 8 orange cups · chill 6 hours

Ingredients

Step by step

  1. Zest the oranges, then halve them, scoop out the flesh and squeeze the juice. Keep the empty halves as cups.
  2. In a pan over medium heat, whisk the coconut milk, orange juice, zest, maple syrup, vanilla and salt.
  3. When it starts to bubble, whisk in the cornstarch to avoid lumps and cook 2–3 more minutes until thickened.
  4. Pour into the orange halves and refrigerate about 6 hours, until set.
